The festival brings together sattu, mustard, whole spices and slow-cooked, smoky preparations that define the region’s home-style cooking. Here’s what’s on the menu.

A Bihari Home Cook Joins Kaansa’s Kitchen

For Magadh, Kaansa has brought in Visiting Chef Sushma Kumar, a Bihari food specialist and home cook, to work alongside Executive Chef Sankha Das Mahapatra. Together, the two have put together a menu rooted in preserving the traditional food of Bihar, brought into Kaansa’s contemporary dining setting.

What’s On The Menu?

The line-up leans into the comforting, robust flavours Bihari cuisine is known for. Among the highlights is the Champaran Ahuna Meat, a richly spiced, slow-cooked preparation drawn from the traditional cooking of Champaran. There’s also the Bhojpuri Litti with Baingan Aloo ka Chokha, pairing roasted litti with smoky chokha in one of the region’s most recognisable combinations.

The Muzaffarpur Murg Salan brings another regional note to the table, while the Madhubani Fish Fry adds a crisp element to the spread. For something a little different, there’s the Dhuska with Kala Chana Ghugni, a traditional pairing that reflects Bihar’s simple, flavourful approach to food.

Beyond these highlights, the festival also features a wider selection of Bihari vegetarian and non-vegetarian specialities, so diners get a fuller picture of the region’s food beyond its best-known dishes.
