Chocolate takes on a whole new identity this World Chocolate Day as ITC Maurya presents an exclusive seven-course Italian tasting menu at Ottimo at West View. Available from 4 to 7 July 2026, the limited-period culinary experience has been designed to showcase cocoa beyond desserts, incorporating it into refined savoury dishes and elegant Italian classics.
Created in collaboration with Fabelle Master Chocolatiers, the thoughtfully curated menu explores the versatility of premium cocoa through innovative techniques, balanced flavours and carefully crafted pairings. Rather than making chocolate the dominant flavour, each course uses cocoa to complement ingredients, adding depth, richness and complexity to the dining experience.
A Seven-Course Culinary Experience
The tasting menu begins with Marinated Burrata with Mesclun Greens, Sour Cherry Glaze and Dark Chocolate Curls, offering a delicate introduction to cocoa in a savoury setting. This is followed by a choice between Beet Carpaccio with Goat Cheese and White Chocolate Drizzle or Smoked Salmon with Goat Cheese and White Chocolate Drizzle, where the sweetness of white chocolate enhances the earthy and smoky flavours.
The third course features Jerusalem Artichoke Soup, available in vegetarian and seafood variants. Guests can choose between a version served with Blue Cheese and Dark Chocolate or one paired with Spiced Confit Prawn and Dark Chocolate, demonstrating how cocoa can add subtle richness to a comforting soup.
For the fourth course, diners can enjoy either Sicilian Lemon-Infused Avocado Battuta with Toasted Hazelnut Crumble and Cocoa Dust or Chicken Liver Pâté with Toasted Hazelnut Crumble and Cocoa Dust, highlighting the interplay of citrus, nuts and cocoa.
Italian Classics with a Cocoa Twist
The main courses continue the chocolate-inspired journey with handcrafted Italian dishes. Guests can choose between Homemade Fettuccine with Roasted Peppers, Aged Parmesan and Dark Chocolate Crumble or a seafood variation featuring Scallops, where cocoa adds texture and depth rather than sweetness.
The sixth course offers another choice between Confit Boletus with Aged Parmesan Risotto and Dark Chocolate Glaze or Confit Duck Leg with Aged Parmesan Risotto, Dark Chocolate and Red Wine Glaze, blending rich Italian flavours with carefully balanced cocoa notes.
The experience concludes with Fabelle Cocoa Trail, a signature dessert created by Fabelle Master Chocolatiers, bringing the seven-course journey to a memorable finish.
